Ripe peaches are a juicy delicacy. They quench thirst in summer and are suitable as a light snack. However, the furry skin is annoying for many people. It is also better to use peeled peaches as a topping for cakes or to make jam. If you know a few tips and tricks, this work is not a problem.

Peel peaches properly

If you want to process peaches, you should make sure that the fruits are actually ripe. A ripe peach smells appetizing and its flesh yields slightly when pressed lightly. Unripe peaches are as hard as a stone, and the skin of overripe peaches often bursts when touched.

  1. First, wash the peaches under running water to get rid of dust and dirt.
  2. Place a large pot of water on the stove. It should fit three to four peaches.
  3. Let the water boil.
  4. Meanwhile, prepare an ice bath by filling a large bowl with water and ice cubes.
  5. Now take a sharp knife and score the peaches crosswise on one side.
  6. Once the water is boiling, blanch the fruit. To do this, put three or four peaches in the hot water for 30 seconds. If the peach stays in the water for too long, it will become mushy.
  7. Remove the fruit from the water with a slotted spoon and immediately place in the ice bath. Here, the fruits cool down quickly after blanching and cannot continue cooking.
  8. After a minute, remove the peaches from the ice water and place them on the counter.
  9. Blanch all your peaches this way.

Blanching and subsequent cooling allows the skin to be easily detached from the fruit. Proceed as follows:

  1. Where you scratched the cross on the peach, you can now use the knife to peel off the peel, strip by strip.
  2. Be careful not to damage the pulp.
  3. Once all the peaches have been peeled, you can stone the fruit. Halve the fruit and remove the stone.
  4. Nothing stands in the way of further processing. You can dice, puree or slice the peaches.

Another tip:
If you are skinning a large quantity of peaches, for example to make jam or as a topping for a tart, you should sprinkle the fruit with a little lemon immediately after skinning. In this way, the peaches do not turn brown until further processing.
