The root of the horseradish serves a variety of purposes in the kitchen and in natural medicine. Since it originally comes from southern Europe, there is usually not enough seed formation in this country until the roots are harvested.

Saving side roots for next season
In commercial cultivation, too, the lateral roots, known as foxes, are cut off at an angle when the horseradish is harvested and stored in moist sand over the winter. In spring they can be planted in the ground for a new growing season.
tips and tricks
Make sure you mark the direction of growth using the cutting direction on the fences. They can only grow optimally with a correct vertical arrangement.
