Around the end of May, the watercress begins to flower, and the flowering period lasts until July. Many small white flowers are in loose racemes, the six anthers are yellow. Later, pods form from the flowers.

Are watercress flowers edible?
Watercress should generally be harvested and consumed before flowering. When the herb blooms, it loses its aroma and active ingredients, and the plant uses all its energy to flower and form seeds.
Then you can either cut back the herb so that it will sprout again, or you can let it flower and use the seeds for a new sowing. But you can also eat the flowers themselves, they are quite tasty and spicy.
