Don't be late harvesting your borage! If you only get the idea to harvest it in the fall, it has already lost its strength. The best time to harvest it is at its peak. This usually starts between May and June and lasts until September.
Advantages and disadvantages compared to drying
Unfortunately, freezing borage is not recommended. Although it is faster than drying. But the following disadvantages arise:
- space in the freezer is required
- the borage loses flavor
- the leaves crystallize on freezing with the result that they are mushy when they emerge
- the frozen borage is difficult to dose
That's how it's done!
First of all, the borage should be harvested correctly at its location. It is best if you use scissors to cut the stems to just above the ground.
When you get home, grab a cutting board and a sharp knife. Cut the borage into bite-sized pieces. Then the pieces go into a freezer bag. Finally, the freezer bag is closed and packed in the freezer compartment.
The flowers are not cut. They come best in ice cube molds with some water. And into the freezer! You can later add these decorative flower ice cubes to drinks such as mixed drinks and sodas.
Use for what?
Frozen borage can be used in a variety of dishes. In general, it is less suitable for raw food dishes such as salads, as it does not look very good. On the other hand, it is suitable for a cold cucumber soup, herb sauces such as the Frankfurt green sauce, stews and mushroom dishes. The borage harmonizes perfectly with dill.
