Like other herbs, savory can be easily frozen and used after thawing as well as freshly harvested herbs. The aroma is well preserved, at least with a short freezing period, the taste does not change significantly.

Can you freeze savory?
You can freeze savory well, but you should make sure that the freezing time is not too long. It doesn't make sense to stock up for several years, as the aroma will then diminish too much and the vitamins and other ingredients will be lost.
Prepare savory for freezing
Cut the savory and remove the stalks. Then just freeze the leaves. It is best to fill these in ice cube trays. If the herb is frozen, place the cubes in one or more larger freezer containers.
If necessary, you can remove the cubes individually. The advantage of this method is that, unlike ice cube trays, the freezer containers are aroma-tight, but you still have small portions on hand. Unfortunately, the taste of the savory diminishes somewhat as the freezing time increases. Therefore, it should not be frozen for too long, a maximum of about 3 - 4 months.
If you want to use the savory later with vegetables you have frozen yourself, it is best to freeze both together. In this case, simply put a few stalks of savory in the vegetable container and you will have both at hand when defrosting and do not have to search for the right herb.
The use of frozen savory
In principle, you can use the frozen savory in the same way as the fresh herb. However, if it has been frozen for a long period of time, the flavor may have diminished somewhat and you will need a little more herb than you are used to.
The essentials in brief:
- freeze the cabbage together with vegetables
- freeze in useable portions
- Possibly prefreeze in ice cube trays
- Freeze for a maximum of 3-4 months
- use like fresh cabbage after defrosting
tips and tricks
Freeze your savory in ice cube trays and later transfer to larger containers. So you always have small portions at hand, but you don't have to look for tiny cups in your freezer.
