The annual summer savory will not hibernate even with the best frost protection. It needs to be sown again next spring. Mountain savory, on the other hand, is hardy and will easily sprout again in the new year when temperatures rise.

Does savory need winter protection?

In a normal winter, mountain savory does not need special protection. Don't cut it too short in the fall, leave any woody parts. Only in the spring cut off all old and withered shoots so that the herb will sprout again.

Winter protection is only recommended in extreme cold. Cover the savory with leaves or a fleece and remove this in good time as soon as the temperatures rise towards freezing again.
