Fully ripened kiwi fruits taste fruity and fresh, depending on the variety sour or sweet. They are best eaten raw. The ripe fruit can also be frozen as fruit puree or in slices.

Since the fresh kiwi fruits are in season practically all year round, it is usually not necessary to freeze them in advance. If you have a particularly lush harvest to process or bought a large batch of fruit cheaply, you are still faced with the question: where to put it? The kiwis, which are still very hard, can be stored in a cool place for several weeks. In the process, they mature.

Freezing fruit

In principle, almost any fruit can be frozen for further processing without any problems. The fruit intended for freezing should be ripe and fresh. You only freeze whole fruits with the berries, stone and pome fruit should be washed, cleaned and cut into pieces or slices. Fruit can be stored in the freezer for between 9 and 12 months.

Since kiwi contains a lot of water, the frozen fruit pieces will taste perfect after thawing, but will no longer have the firm consistency of the fresh kiwi. It is therefore advisable to make a fruit puree from ripe kiwis and freeze it. The thawed fruit puree can be used in many ways:

  • for making smoothies and cocktails,
  • for cooking jams or chutneys,
  • as a dessert sauce,
  • in muesli.

Other uses

For water-rich fruits such as kiwi, other preservation methods can be used, e.g. B. Drying or boiling down. To dry, cut the peeled kiwis into slices and dry them for several hours in the oven (convection) at a temperature of around 50° C. The oven flap should remain slightly open. Kiwis can be wonderfully processed into fruity and colorful jams.

Because kiwis contain actinidin - an enzyme that breaks down protein - eating them with protein-rich meals aids digestion. You can also make the meat more tender by rubbing it with kiwi peels or kiwi slices.
