Was the appetite once again greater than the actual hunger or did the nice asparagus seller pack a gram or two more into the bag? Sometimes you just can't manage to use all of the green asparagus at once. But throwing away the delicious vegetables is a real shame. Of course, the sticks taste best fresh, but with a few simple tips you can extend their shelf life by a few days.

Store green asparagus upright
While you can wrap white asparagus in a tea towel and keep them lying flat in the fridge, you have to store green asparagus upright. That's how it's done:
- fill a glass with cold water
- place the green asparagus upright with the ends down
- Put a plastic sheet over the heads to protect the green asparagus from drying out
- place the jar in a place protected from light
Incidentally, green asparagus, which was already a bit dry in the supermarket, is fresh again in this way.
Freeze green asparagus
Even if green asparagus stays fresh a little longer when stored as described above, you should still use it up after three to four days. If there is no way to do this in the foreseeable future, you should freeze your green asparagus. If frozen, the shelf life is extended to several months. Before doing so, you should clean the sticks under running water and then pat them dry to prevent freezer burn. Cut off the woody ends and shred the stalks into small pieces depending on your desired use. Plastic bags are suitable for packaging. Frozen green asparagus can be optimally portioned. After defrosting, cook the vegetables al dente again.
Attention: Green asparagus can only be stored unpeeled. Vegetables that have already been cooked should never be stored at room temperature.
