Pickled lemons give many dishes a wonderful aroma - especially if they are sweetened. Our recipe, including practical step-by-step instructions, shows how you can quickly and easily put lemons in sugar and preserve them for a few months!

Recipe for pickling lemons in sugar

You need:

  • 2 lemons*
  • 2 tbsp sea salt
  • 2 tbsp sugar**
  • 2-3 tbsp olive oil
  • Jar
  • Bowl
  • flat glass bowl with lid

* Be sure to use untreated lemons, preferably organic. You have to peel treated fruit first - apart from the fact that they are less tasty.

** We advise you to use birch sugar instead of conventional sugar. The latter has the property of being almost as sweet, but more beneficial to your health.

How to pickle lemons in sugar step by step

  1. Wash the lemons under hot running water.
  2. Dry the fruit with kitchen paper.
  3. Using a sharp knife, cut the lemons into slices about 2mm thick.
  4. Use clean hands or a spoon to remove and discard the seeds.
  5. Mix the salt and sugar evenly in a bowl.
  6. Sprinkle a (generous) layer of salt and sugar mixture in a shallow glass bowl.
  7. Spread a layer of lemon slices on top.
  8. Sprinkle them again with the salt and sugar mixture (still generously!).
  9. Then put another layer of lemon slices on top.
  10. Continue following the pattern until all the lemon slices are layered on top of each other.
  11. Close the glass bowl.
  12. Put the whole thing in a sunny place, such as on the windowsill, for three days. After a few hours, the lemon slices are already in their own juice.
  13. Shake the glass bowl occasionally and spoon a little juice over the top slices if they aren't completely covered with juice.
  14. Sterilize a clean mason jar with boiling hot water.
  15. Layer the lemon slices (after three days) from the bowl into the mason jar.
  16. Then pour over the juice that has formed until all the slices are covered.
  17. Add the olive oil.

Now the lemons are already pickled and you can keep them in the fridge for three to four months and enjoy them.

Note: Other methods of pickling lemons commonly require the addition of heat - but they are more like canning or preserving than just pickling.
