Red cabbage is a classic vegetable for the autumn and winter season. But what to do if there is too much of it left? We recommend pickling part of your red cabbage - especially since you only need a few ingredients and the effort is really minimal. With our recipe and the simple instructions, you will certainly succeed in the task without any problems!

Recipe for pickling red cabbage
You need:
- 1 kg red cabbage
- 15 grams of salt
- 4 bay leaves
- 2 juniper berries
- 1 tsp cumin
- Mason jars with lids
- big pot
- conventional saucepan
- big bowl
How to pickle red cabbage correctly
- First sterilize the preserving jars to reliably remove any germs and bacteria and to make the pickled red cabbage last longer. To do this, you should first wash the glasses thoroughly with washing-up liquid and water. Then fill a large pot with water and place the glasses in it. Note that the glasses must be completely covered with water. Bring the whole thing to a boil - then let it cook for about five minutes. Then take the pot off the stove and carefully remove the glasses. Place the glasses on kitchen towels - they can drain there. When dry, they're ready to store your pickled red cabbage.
- Now for the actual pickling: Clean the red cabbage carefully.
- Slice the vegetables into fine strips.
- Mix the red cabbage strips with ten grams of salt in the large bowl.
- Whisk until the juice forms properly.
- Then mix in the bay leaves, juniper berries and cumin.
- Pour the mixture into the sterilized jars.
- Boil 500 milliliters of water in a saucepan with the remaining five grams of salt.
- Pour the liquid over the cabbage mixture in the mason jars. The contents of the glasses must be completely covered with the salt water.
- Seal the jars airtight.
- Place the mason jars in a cool place for four weeks.
- Then you can use the pickled red cabbage just like sauerkraut.

Of course there are other options for pickling red cabbage - for example with wine vinegar, sugar and cloves. Feel free to experiment a little with the ingredients used.
