The strawberry season begins as early as May and the delicious fruits are available in stores until September. Strawberries are rich in minerals and vitamins, but unfortunately the delicate fruits do not keep very long. They stay fresh in the fridge for a day or two, but then you can no longer stop the mold from forming. Therefore, it makes sense to produce strawberry juice when a lot of fruit in the garden is ripe at the same time or when there are cheap offers in the trade.

Make your own strawberry juice

The fruit juice can be prepared at home without much effort. Especially the soft fruits, e.g. B. strawberries, can be easily juiced. You can choose between two methods, cold juicing and hot juicing.
In both cases, only use fruit that is in perfect condition and has no bruises. Rinse the strawberries under running water and remove the green stalks.

The cold juicing

With this method, you process the fruit in its raw state. In this way, vitamins and nutrients are largely preserved.
Choose between the centrifuge or the juicer (Slow Juicer).
The centrifuge crushes the strawberries with a grating disc and extracts the juice by spinning. Juice and pomace end up in different containers.
The Slow Juicer works much more slowly and presses the juice out of the strawberries using rollers. Here, too, the juice and pomace end up in separate collection containers.
If you don't have a press or a centrifuge, you can use simple means to extract juice. Puree the fruit with a blender or blender and press them out using a kitchen towel or pass the puree through a very fine sieve.
Cold-pressed juices contain almost all of the vitamins and nutrients, but they only keep for a few days in the refrigerator.

Hot juicing with steam

The steam extractor consists of two pots one above the other. The water is heated in the lower pot, and the steam reaches the upper container, which contains the fruit, via a perforated plate. The hot steam destroys their cell structure and the juice escapes. The hot juice can be filled directly into sterile bottles via a drain tube on the boiler.
With steam juicing, you can produce larger quantities of juice that have a relatively long shelf life. However, many nutrients and vitamins are lost with this method.
