Everything starts with transportation
Mushrooms generally like it cool and airy. You should pay attention to this when transporting it from the market home. It is advisable to place the vegetables in an air-permeable container immediately after purchase. In this way you create the first good conditions for the mushrooms to remain in excellent condition for a few days.
This is the best way to store mushrooms
There are several points to keep in mind when storing mushrooms:
- don't squeeze

- store in the dark
- store airy
Don't squeeze
Mushrooms are high in water and quite sensitive to pressure. That is why it is extremely important not to bruise the vegetables. Otherwise, the mushrooms easily bruise and rot faster.
Store cool
Store your mushrooms in a cool place. Storage in a cellar or in an unheated pantry is ideal. Alternatively, you can store the vegetables in the refrigerator - preferably in the vegetable compartment.

When the outside temperatures are cooler (in late autumn and/or winter), mushrooms can also be stored overnight on the balcony or terrace.
Store in the dark
Darkness is also an important point. If there is too much light (sunlight), your mushrooms will go bad faster. So make sure you choose a location in the basement or in the attic that is not near a window.
Store airy
Airy storage is one of the most important points. Never put your mushrooms in a plastic bag or jar. The vegetables rot quickly in it and can even develop toxic substances. It's better to keep mushrooms in paper bags or just toss them in a basket lined with some newspaper.
Note: The basket of newspapers refers to storage outside the refrigerator, the paper bag refers to storage in the refrigerator.
Mushrooms stay fresh for a day or two in the refrigerator; they usually keep for four to five days in the cellar or in the pantry.
Important: Purchased mushrooms are usually crammed into a plastic bowl and also covered with foil. Remove the latter immediately after purchase or at the latest when you arrive home.
Preserve mushrooms for months
There are also two ways to preserve mushrooms for several months:

- dry
Freeze mushrooms
Clean, cut and blanch the mushrooms, then dry them well and place in airtight freezer bags. Then put these bags in the freezer. Frozen mushrooms can be eaten for up to six months. Do not defrost the vegetables, but add them directly to the fresh ingredients in the pot or pan.

Clean and cut the mushrooms. Then put them in the oven for about five hours at around 40 degrees Celsius and with the oven door open. Alternatively, you can also use a dehydrator. It works more efficiently than the oven. After drying, you should store the mushrooms in an airtight container.
