Things to know about spring onions
The term "leek onion", as the spring onion is also often called, raises the legitimate question: what now? Onion or Leek? In fact, a spring onion resembles a thin stalk of leeks, but the thickening at the bottom and the tubular leaves reveal that spring onions are onions that have been harvested young. Although the name suggests otherwise, the delicate onions are not only in season in spring. The harvest season in Germany extends into October.
Freeze spring onions in three steps
Since spring onions can be frozen raw, it only takes a few simple steps to create a long-life frozen supply. The fresher the onions are frozen, the crunchier and tastier they will be once thawed.
- Clean the fresh spring onions by cutting off the roots and any wilted leaves. It is usually not necessary to peel off the outermost skin.
- Cut the spring onions into rings. You can use both the white part and the green leaves.
- Place the prepared spring onion rings raw in freezer bags or boxes suitable for freezing. Squeeze out as much air as possible from freezer bags before sealing. Tightly closed, the containers are now placed in the *** freezer compartment.
Depending on later use, it is also possible to freeze the white part of the spring onions separately from the green onion leaves. Don't forget to label the freezer containers with the freezing date and the contents.
Defrosting spring onions
If you want to use the spring onions raw, for example in salads or dips, place them in the fridge in the sealed freezer. As a result, the cold chain is not interrupted when defrosting and harmful germs have no chance of spreading to the vegetables. Since defrosting in this way takes a few hours, it is best to put the spring onions in the fridge the evening before.
For use in cooked dishes, add the frozen spring onion rings directly to the pot or pan. By briefly boiling or sweating, the spring onions defrost quickly and retain their crunchy consistency. Defrosting them first would make them mushy.
Frozen spring onions can be stored in the freezer at -18 °C for one year. The earlier you use them, the fresher and more aromatic the onions will taste.
