Prepare puff pastry for freezing

- Clean the puffballs from dirt and unsightly bruises
- Cut the mushrooms into the desired shape
- Prepare boiling salted water in a large saucepan
- Dip the mushrooms in boiling salted water for about a minute, preferably in a colander
- Take the mushrooms out of the water and shock them in ice-cold water
This treatment keeps the puff pastry crisp and keeps its colour. Before freezing, you can add oil and herbs such as parsley, chives, thyme or rosemary. This means that the mushrooms are already in a delicious marinade after defrosting and can be processed further immediately.
