Spring onions have a special talent: they give salads and other dishes such a hot and spicy aroma that you can often do without other spices. It is therefore not surprising that many people like to keep several of these tasty onions at home so that they can be used when needed. These vegetables don't keep very long in the fridge, but they can be frozen. Find out exactly how in our article!

Potential Dangers of Freezing Spring Onions
A lot can go wrong when freezing spring onions. Possible results are:
- mushy consistency
- excessive loss of vitamins
- greatly reduced aroma
- complete uselessness
In order to prevent these scenarios, it is important to act in a considered manner. Follow our guide. It will lead you to a satisfactory result.
Freeze spring onions - simple step-by-step instructions
- Clean your spring onions thoroughly.
- Then dry the onions carefully.
- Before freezing, the spring onions must be completely dry - otherwise they will get freezer burn in the freezer and are no longer usable.
- Cut the onions into small rings or sticks with a sharp kitchen knife. This way you save space in the freezer and have the onions ready to serve when you want to use them weeks or months later.
- Fill the rings or sticks in small portions in freezer bags or alternatively in sealable boxes that are suitable for the freezer.
- If you decide to use freezer bags, you have to remove the excess air from them after filling them with the spring onions. A vacuum sealer is extremely useful for this. If you don't have one, just use your mouth.
- Seal the bags or boxes tightly (airtight).
- Place the containers of scallions in the freezer.
tips
The onions will keep in the freezer for up to six months.
Alternative: Blanch spring onions before freezing
If you blanch the spring onions before freezing, they will be almost as fresh after defrosting as before. Thats how it works:
- After thoroughly cleaning the onions, put them in boiling salted water.
- Turn the heat down so the water is just simmering.
- Let the spring onions steep for a maximum of ten minutes.
- Drain the onions (use a strainer).
The further procedure is the same as for the method without blanching.
Special tip: Freeze the spring onions separately according to parts
It is wise to freeze the white and green parts of the spring onions separately. Sometimes you only need the white or only the green elements of the vegetable - so it makes sense to keep them separately so that you can always use the right bag.
Thaw the spring onions and use them again
If you want to use the spring onions for soups or other cooking dishes, you can let them thaw before use. On the other hand, it is better to use unthawed onions for salads. Once thawed, the vegetables tend to have a soft, mushy consistency.
Good news at the end: The valuable ingredients are largely preserved by freezing.
