A hearty raclette is the ideal meal for a convivial evening. Often, however, raclette cheese is left over. Fortunately, you can freeze it without any problems and organize an extensive raclette meal again at a later date.

Freeze slices of raclette cheese
Leftover cheese from raclette is usually sliced. Although the raclette cheese dries out faster in this form and loses its aroma, it is still possible to freeze it in slices and, if necessary, to thaw only the required amount:
- Label a plastic or stainless steel freezer jar with the date it was frozen and the contents.
- Take the fresh and well-chilled raclette cheese and place greaseproof paper between the individual slices. This way the cheese slices don't stick together and you can easily remove the required amount later.
- Place the raclette cheese in the freezer-safe container and seal tightly.
- Place the can in the *** freezer at -18 °C. Here the cheese stays fresh for about three months.
Freeze raclette cheese in one piece
If you have bought the spicy raclette cheese in one piece, it is best to freeze it because it stays fresh and aromatic for longer. Pack the piece of cheese in a labeled freezer bag or a freezer-safe box and seal the container airtight. It will keep for at least three months in the *** freezer compartment. The longer the cheese is stored, the more it loses its aroma.
If you don't want to use the cheese for a raclette but for gratinating, for example, you can simply grate the required amount of cheese from the frozen raclette cheese and put the rest back in the freezer.
Thaw raclette cheese
You should give cheese enough time to thaw: It is best to put it in the refrigerator in the unopened freezer container the evening before. If it hasn't completely defrosted when you eat the raclette, it doesn't matter. The thawed raclette cheese will melt in the pan and taste like fresh from the cheese counter.
If there is any left over from the thawed raclette cheese, you should not refreeze it. Although there are no health risks to worry about, the cheese will have little taste and a negatively changed consistency after it is thawed again.
