What you need to consider before freezing

If you want to freeze hummus, it should be prepared as freshly as possible so that it tastes aromatic even after it has been thawed. In any case, it should not be left open at room temperature for too long, because harmful microorganisms can spread to the hummus after just two hours.

Freeze hummus properly

The hummus does not need to be prepared for freezing. You can simply pack the finished chickpea paste and put it in the freezer. If you usually need small portions, you can freeze the hummus in ice cube trays. This way you can always thaw the amount of hummus ice cubes you need and leave the rest in the freezer for later.

  1. Using a spoon, scoop small portions of hummus into an ice cube tray.
  2. Place them in the *** freezer for a few hours.
  3. As soon as the chickpea paste is frozen, you can transfer the cubes to plastic or stainless steel freezer bags or boxes.
  4. Seal the containers tightly and remember to label them with the freezing date.
  5. Place the well-wrapped hummus in the *** freezer at -18 °C.

How to defrost the chickpea paste

Since hummus is eaten cold, you should also avoid heating it to thaw it. The gentlest method is thawing in the refrigerator: Place the unopened freezer container in the refrigerator overnight and let the hummus thaw slowly. Due to the cold temperatures, no harmful germs can multiply on the food during the thawing process. Alternatively, it is also possible to defrost the hummus in the microwave. Select the low defrost level for this.
In both cases, you should puree the thawed chickpea paste again with the hand blender or at least mix it well so that you get a homogeneous mass again. When freezing, the oil can separate from the other ingredients in the hummus.
Freshly frozen hummus should be consumed within three months. The longer food is stored in the freezer, the more it loses its aroma.
