The mutabilis is an excellent, very aromatic edible mushroom. It has many uses in the kitchen, but above all in creamy soups and for drying. The stalks in particular are suitable for a very tasty mushroom powder.

Dry the mutabilis sorted by type
Due to their very own, characteristic aroma, you should always dry or use mutabilis by type. Only the young and firm specimens are suitable for drying, while damp, spongy and older mushrooms are unsuitable. It is best to cook a fine soup from the hats, only the stalks are dried - unless you want to build up a larger stock.
Dry the mutabilis
The mushrooms are not washed before drying, but only cleaned with a knife and, if necessary, with a brush. Then cut them into thin slices, no more than three to five millimeters thick. Drying works best in a dehydrator, but the mutabilis can also be processed in a convection oven. When drying in the oven, you should make sure that the mushrooms lie individually on a grid and are ventilated all around. The temperature should not exceed 50 °C and the oven door should be slightly open. Incidentally, some new convection ovens have a built-in contact on the door so that the oven only works when the door is completely closed. As a result, no moisture can escape and drying in such an oven is not possible.
Properly store dried mutabilis
The dried mushrooms must be "rustling dry" and should no longer bend. If they still contain moisture, they will begin to mold. Fill the dried mushrooms into jars that can be closed well (dark sun-protection jars are best) and keep them in a dark and cool place.
How can dried mutabilis be further processed?
For further processing, soak the dried mutabilis for at least 20 to 30 minutes - depending on the recipe longer - in warm water. Then squeeze them out well and use them like fresh mushrooms. Don't throw away the soaking water, you can use it for other dishes or use it as a base for soups and sauces.

Tufts of mutabilis can be found between May and December, especially on hardwood. However, they should only be collected by experienced mushroom pickers, as there is a high risk of confusion with the very similar - and deadly poisonous - poisonous häubling and the also very poisonous green-leaved brimstone and other wood mushrooms. You can also breed mutabilis at home yourself.
