Quinces are closely related to apples and pears and therefore have a lot in common with these fruits. However, quinces cannot be eaten like their relatives because they are just too hard and their taste is not very good either. However, the quince juice tastes good, so it is worth making juice from quinces.

Typically, quince juice is extracted by boiling or steaming. With this procedure, the fruits become soft and can be pressed. The hot juice can be filled into sterile bottles and stored over a longer period of time.
Cold juicing is also possible, but is a bit more complex.

Mash production for cold juicing

In order to get as much juice as possible in the cold pressing process, you need to make a kind of mash from the fruit.

  1. Cut the quinces into as small pieces as possible.
  2. Freeze the fruit pieces in suitable containers.
  3. Thaw the whole thing again after a week.
  4. Chop the now soft pieces of fruit in the food processor.

Instead of making the mash by freezing, you can also finely shred the quinces. However, you need a very powerful shredding machine for this. You can squeeze the resulting snippets just like the mash.

The fruit press is a barrel-like container made of wood or metal. Line the container with a fine cotton cloth and pour in the mash. Close the container and turn the spindle. This spindle now presses wooden or metal discs down onto the mash and presses it out. The juice runs through a sieve from the opening provided. The sieve filters out all solid components. The result is clear quince juice.
The refreshing juice has a slightly tart taste, it can be drunk pure or mixed with other juices.
If you want to bottle the juice and store it, you have to boil the juice and pour it into sterile bottles while it is still hot.
If there are large quantities of quinces, you should try to have your harvest juiced in a wine press. These establishments, mostly found in orchards, have large presses that effortlessly squeeze your quince juice.
