The porcini mushroom, also known as the master mushroom, is one of the noble mushrooms and is a real all-rounder in the kitchen. You can use it in many dishes, fry it, boil it, stew it, pickle it… but one thing is important: use it as soon as possible after collecting or buying it, because like all mushrooms, this one perishes quickly and cannot be stored for long .

Don't take every boletus from the forest with you
If you know in advance that you will not be able to use your yield on the same day, you should only take young mushrooms from the forest. These should also be checked on the spot for possible maggot damage, otherwise you could be in for a nasty surprise at home. Maggots (and other creatures) also find the porcini tasty, but often hide inside the mushroom. There they eat each other unnoticed from bottom to top. So always cut the porcini lengthwise and remove any maggots and maggot traces.
Bought vs. self-gathered mushrooms
Of course, nothing is as fresh as porcini mushrooms that you have collected yourself: If they are still young, you can easily keep them in the fridge for a day or two - cleaned, of course. Sometimes you can buy fresh porcini mushrooms at the weekly market or even in the supermarket. These can no longer be stored as they have already been on the road for a few days. Like all wild mushrooms, these are also imported from abroad (mostly from Eastern European countries) and are therefore no longer really fresh when sold. Purchased mushrooms should therefore always be processed on the same day.
Clean the porcini properly
If the porcini mushrooms are to be kept for a few more days, you should still clean them beforehand - the main thing is to find and remove any maggots. Otherwise, the little creatures eat their way through the mushrooms during storage, so that they seem to spoil completely unexpectedly. Please do not wash the porcini mushrooms either, otherwise they will soak up water and spoil more quickly. Not to mention the loss of flavor they suffer from swelling.
How to store porcini mushrooms
To keep your porcini mushrooms fresh for another day or two, you should heed the following tips:
- Do not store the mushrooms in plastic or synthetic containers.
- Also remove plastic foil or similar.
- Condensation forms underneath and the mushrooms spoil faster.
- Instead, wrap the cleaned mushrooms in a cotton or linen cloth.
- You can also use paper or cellulose.
- Store the mushrooms protected in this way in the vegetable compartment of the refrigerator.
- Make sure the mushrooms are loose and not crushed.
Once mold has formed, the mushrooms are no longer edible and should be discarded.
