Raised beds are ideal for growing herbs - this cultivation method is particularly recommended on the balcony or terrace, as fresh and healthy kitchen herbs are then within walking distance. However, not all herbs are hardy and therefore cannot overwinter outside in the raised bed.

Do not overwinter Mediterranean herbs outdoors

This is especially true for perennial Mediterranean herbs such as rosemary, oregano, thyme, lavender or lemon verbena. These plants tolerate either only low or even no sub-zero temperatures - and should therefore either be harvested in autumn and replanted in spring or dug up and frost-free (but cool) overwinter in the house. Frost-hardy kitchen herbs such as parsley, chives and peppermint, on the other hand, can remain in the bed. Cut them back vigorously in autumn and cover them with fir or spruce branches, which are removed again in spring.

tips

Many herbs - including basil, dill, marjoram, cress and coriander - are only annuals and therefore do not have to be overwintered under special precautions.
