Harvest time depends on the variety

There are many different types of white cabbage, which differ mainly in their harvest time. Most varieties can be harvested from mid-September to November. Some very early varieties can be picked from the garden from the beginning of June and if you prefer your white cabbage at home, you can harvest white cabbage from mid-July at the latest. Don't harvest too late

You should not harvest white cabbage in frost, but white cabbage is hardy. So you don't have to harvest it before the onset of winter. However, you should protect it a little from the cold, e.g. with fir branches or something similar. Do not leave white cabbage for too long because, as with all types of cabbage, the head can burst open.
