The right time to harvest Pak Choi

Pak Choi should not be harvested too late, otherwise it will develop flowers and the leaves will become fibrous. In order to find the right time to harvest, there are various guidelines:

  • Depending on the variety, Pak Choi is 20 to 50 cm tall. You can read the maximum size of your Pak Choi on the seed packet. Once it has reached that height, you can harvest it.
  • Pak Choi is usually harvested eight to ten weeks after sowing. So if you grew it early in April, you can start harvesting from mid-June.
  • If the Pak Choi shows the first signs of buds, it's high time. Then you should harvest it immediately.

When you're sure your bok choy is ready to harvest, gently turn it out of the ground by hand. Make sure that you harvest it with the root if possible, so it stays fresh longer.

Store pak choi

Pak choi can be stored in the crisper in the refrigerator for seven to ten days. Roughly clean sand and soil and remove brown leaves. Don't wash it before putting it in the fridge! It cannot be frozen raw as it will become mushy. However, you can easily freeze it cooked, fried or boiled.
