Dandelions are a delicious addition to any salad

Dandelion salad with baked camembert

This colorful salad covers almost the entire daily requirement of vitamin E and is a real vitamin C bomb.

Ingredients:

  • 250 g young dandelion leaves
  • 1 yellow and red pepper
  • 2 spring onions
  • 1 packet of breaded Camembert

Dressing:

  • 4 tbsp olive oil
  • 1 tbsp white balsamic vinegar
  • 1 tsp mustard
  • Some currant jelly or sugar
  • salt and pepper to taste

preparation

  • Wash, quarter and deseed the peppers and place on a baking sheet.
  • Place in the oven on the top shelf and grill on the highest level for 5 to 10 minutes.
  • Remove, let cool and peel off the skin.
  • Cut the peppers into fine strips.

Goutweed contains a lot of vitamin C

Ingredients:

  • 500 g goutweed
  • 1 shallot
  • 1 clove of garlic
  • 100 ml cream
  • 1 tbsp butter
  • some flour
  • salt
  • pepper
  • nutmeg

preparation

  • Wash goutweed well and chop coarsely.
  • Peel the onion and cut into small cubes.
  • Fry in butter until translucent.
  • Add ground elder and allow to collapse.
  • Dust with flour and pour in the cream.
  • Season with salt, pepper and nutmeg.
