The real chanterelles are completely non-toxic when cooked and are therefore a widespread and popular edible mushroom in Central European cuisine during the season. However, because of the chitin they contain, they should not be eaten raw in large quantities.

Be careful with self-gathered mushrooms
Real chanterelles can also have an upset stomach due to the chitin they contain if they are eaten raw before sleeping or in larger quantities. The consumption of the false chanterelle, which looks confusingly similar to its real counterpart, is not recommended. On the one hand, this orange-yellow fork leaf does not taste particularly good, but it can also cause stomach and intestinal problems in sensitive people.
tips and tricks
If you are unsure about the identification of chanterelles, you should either consult a mushroom expert or better leave the mushroom in question as it is.
