Almost every gardener knows the problem: all the aubergines are ready to be harvested at once. If you don't know what to do with all those fruits anymore, you should try drying them.

Drying aubergines - a tried and tested method of preservation

Drying fruit is the oldest method of preserving food. Aubergines can also be easily used in this way. If your eggplant care was too good, there are several ways to preserve the fruit.

Ways to dry:

  • Hanging on thread
  • oven
  • dehydrator
  • On grate outdoors

Prepare eggplant

After harvesting, the aubergines are washed and dried well. Then remove the stem attachment. Cut the aubergines into thin slices. The thinner the slices are, the faster they dry.

Hang to dry

The aubergine slices are threaded in the middle. The thread is hung in an airy, preferably dry place. The aubergines should not be dried directly in the blazing sun, as this will cause the fruit to fade and the valuable vitamins to be destroyed too much.

Dry in the oven or dehydrator

The oven is preheated to the lowest temperature. One or more grids are lined with parchment paper. The grates are pushed into the warm oven. The slices are turned over several times so that they dry on both sides. The dehydrator is preheated according to the instructions. Place the slices a little apart on the grids and push them into the machine. Turning around is not necessary here.

Dry flat

A grate is also well suited for drying lying down. It is set up in a warm, dry place and covered with the slices. The disks must be turned over regularly.

When is the drying process finished?

Depending on the thickness of the slices and the type of aubergine, it may take several days for the slices to dry thoroughly. Storage is in airtight jars that are stored in the dark.

If you have planted too many eggplants in the greenhouse or in the open ground, drying is the ideal solution. Dried aubergines are used like dried tomatoes and give dishes a very special aroma.
