Harvest parsley at the best time

Because parsley is most fragrant just before flowering in the second year, cut biennial plants just above ground level in May or June.

Pull parsley roots out of the ground in late fall. But you can also leave them in the ground as long as it is not frozen through.

Prepare parsley leaves

  • Rinse the leaves on the stems
  • Allow to air dry
  • If necessary, dry with kitchen paper
  • Check for insects

  • If necessary, finely chop the leaves

You can freeze the leaves uncut in bundles. This preserves the aroma better.

Preferably fill the parsley leaves in small freezer bags that can be sealed airtight. There is usually too much air in freezer containers.

Squeeze the filled freezer bags from back to front to release the air and seal.

It is better to store parsley root in a dark and cool place

Parsley root keeps well if you store it in a very cool, dark place. However, the root should not be cleaned, as this will cause it to wither and become inedible more quickly.

When frozen, the parsley root loses its hearty aroma. If you still want to freeze parsley root, cut the cleaned root into small pieces and freeze them in the freezer bag.

The frequently recommended blanching is not necessary. It just decreases the cooking time later because the roots will soften faster.

Use frozen parsley in the kitchen

Parsley from the freezer is so tender that it defrosts very quickly. You only have to take them out of the refrigerator just before processing.

If the parsley is to be sprinkled over potatoes, fish or other dishes, crumble the herb with your fingers while it is still frozen. Then sprinkle it over the dishes like fresh parsley.
