Fresh parsley only keeps for a few days when cut. Shortly after harvesting, the leaves turn yellow and the herb loses its aroma - not to mention the valuable ingredients. Use the herb as fresh as possible or preserve it.

Use these methods to preserve parsley
There are several methods you can use to store parsley for a few days or to preserve it for a longer period of time.
- Store in the refrigerator
- Freeze
- dry
- Put in oil
Store fresh parsley
Clean the parsley. Fold kitchen paper in several layers and moisten the paper. Crush the parsley and place in a freezer bag. You can store the herb in the fridge for a maximum of two days.
Many consumers place chopped parsley in a glass of water to keep it fresh. That's of little use. After a short time, the herb begins to wither. Almost nothing of the aroma remains.
drying or freezing
Dried parsley almost completely loses its aroma. If you have the opportunity, consider freezing parsley rather than drying it.
To dry, rinse the herb briefly and shake it out carefully. Hang the parsley in bunches in an airy but not too sunny place. When cut into small pieces, the leaves are best dried in the oven or dehydrator.
To freeze, pluck the cleaned leaves from the stalks, cut them into small pieces and place them in freezer bags in the freezer. Parsley will keep there for several months.
Put parsley in oil
Parsley that is preserved in oil does not spoil because the oil encloses the plant parts in an airtight manner. The herb can be preserved in this way for many months.
Put the parsley stalks or just the leaves in a clean bottle and pour in enough oil to completely cover the herbs.
tips and tricks
Parsley ice cubes can be used wonderfully as a seasoning for hearty vegetable stews. To do this, cut a few parsley leaves, place them in the ice cube tray and pour hot water over them. Once cool, place the container covered in the freezer and freeze the cubes.
