Delicate coriander leaves can be stored for quite some time. Shelf life options range from 14 days to 12 months. Here we explain how to do it in the fridge, dry or in the freezer.

Fresh from the garden straight into the fridge - this is how it works
If there is no immediate need for the freshly harvested coriander in the kitchen, the spicy leaves can be stored in the refrigerator. How to do it right:
- Using a sharp knife, cut 2 to 2.5 cm from each stem
- do not wash the stems and leaves at this time
- Fill a glass with water and place the cilantro in a small bunch
The coriander leaves stay fresh for 7 to 14 days in the refrigerator. Optionally, put a plastic bag over it so that the foliage does not fade so quickly.
This is how cilantro dries in the air
When the garden year is coming to an end, harvest the last fresh coriander shoots in good time. To keep the spice plant for a long time, the branches are simply air dried. That is how it goes:
- Wash the coriander sprouts and pat dry with a cloth
- Tie the ends of the stems together into small bouquets with a raffia ribbon
- Hung upside down in an airy, dark place, the leaves will dry within 2 weeks
Where there is a risk of sun rays getting to the spice leaves, put a perforated paper bag over each bunch. Once dry, store the cilantro in the airtight jar to use within the next 6 months.
Skillfully freeze coriander - it will last for 12 months
Leafy herbs lose their consistency when frozen and become mushy after thawing. Fresh coriander is no exception. To counteract this shortcoming, we recommend the following trick:
- Wash the fresh coriander and let it dry on kitchen paper
- Spread out side by side on a baking sheet without touching points
- Pre-freeze in the freezer until the leaves are hard
If the coriander leaves are frozen hard, they can be stored in bags or cans in the freezer to save space.

Don't throw away the roots of a cilantro plant. This part of the spice plant is used in numerous Thai recipes, such as in the classic 'Tom Yam Gung'.
