If you used to think cress was cress, then you are wrong. There are many types of cress, which differ in leaf colour, size and taste. For gourmets, it's worth experimenting a little with the different types of cress.

The three most well-known types of cress

The three main types of cress are:

  • garden cress
  • watercress
  • Nasturtium

Garden cress (Lepidium sativum)

Garden cress is most commonly sown in gardens and on windowsills. It develops the smallest leaves and the most delicate plants.

Garden cress germinates very quickly and is ready to harvest within a few days on the window sill and within a week or two outdoors. Garden cress seeds are often eaten as sprouts. The leaves have a slightly pungent flavor reminiscent of mustard.

Watercress (Nasturtium officinale)

Watercress is an aquatic plant. But it also grows on very moist soils. This type of cress is not suitable for sowing on the window sill.

The leaves are larger than those of the garden cress and the plant grows a little taller.

Only the leaves of the watercress are eaten. They have a slightly spicy taste.

Nasturtium (Tropaeolum)

Nasturtium is primarily planted as an ornamental plant for its decorative leaves and very pretty yellow-orange-red flowers.

The leaves are edible. They have a mildly aromatic taste. The flowers can also be eaten. They are often used to decorate salads and soups. The seeds of the nasturtium serve as a substitute for capers and are cooked in dishes such as chicken fricassee.

Numerous types of cress from Japan

In Japan, cress has always been considered a delicacy. Not only green cress varieties are grown here, but also reddish and brown-violet varieties.

Healthy herb from cultivation in the garden or at home

All types of cress are also used as natural remedies due to their numerous ingredients. They contain a variety of vitamins and minerals.

Cress stimulates the appetite and protects the immune system. Especially in winter, the herb ensures the supply of vitamin C.

tips and tricks
