Chinese cabbage can be used in many ways - it tastes particularly good in salads, vegetable dishes and Asian dishes. If you have leftover fresh Chinese cabbage and want to keep it for a few weeks or months, you can pickle it. We will explain how to do this.

Recipe for pickling Chinese cabbage
You need:
- Chinese cabbage
- 1 liter of filtered water
- 2 tbsp sea salt
- 1 tablespoon of sugar*
- any seasonings**
- mason jars
* We advise you to use birch sugar instead of conventional granulated sugar - for the sake of your health.
** Eligible for example
- dried chili peppers
- finely chopped garlic
- grated ginger
- finely chopped spring onions
- Etc.

Just add what you like best. In principle, however, you only need Chinese cabbage, water, salt and sugar for pickling.
How to pickle Chinese cabbage correctly
- Boil the water in a saucepan.
- Add salt and sugar.
- Let the whole thing cook until the salt and sugar dissolve.
- Take the pot off the stove.
- Wait for the broth to cool down.
- In the meantime, cut the Chinese cabbage into strips with a sharp knife - first halve and quarter the vegetables.
- Place the cabbage strips in a bowl.
- Add your desired seasonings to the cabbage.
- Mix together the cabbage strips and seasonings.
- Pour the cabbage and seasoning mixture into sterile mason jars.
- Pour the cooled broth over the vegetables so that the latter are completely covered with liquid. However, there should still be 1.5 to two centimeters of free space at the edge of the glass.
- Close the jars tightly.
- Leave it in a dark place at room temperature for about 14 days.
- Put the glasses in the fridge.
- Wait another week or so before trying your pickled Chinese cabbage.
- After first opening, continue to store in the refrigerator.

The pickled Chinese cabbage can usually be kept for up to three months.
Extra: Sterilize preserving jars
To sterilize your mason jars:
- Wash thoroughly with water and detergent.
- Place in a large pot.
- Fill the pot with plenty of water so that the glasses are completely covered.
- Boil the whole thing.
- Expose the glasses to the intense heat for about five minutes.
- Take the pot off the stove.
- Take out glasses carefully.
- Let the jars dry on paper towels.
