The sweet relative of the local potato can be found more and more often in supermarkets. Tasty recipe suggestions arouse curiosity and tempt you to buy the comparatively large tubers. If not everything is used, the rest can be frozen for the next round of cooking.

More and more sweet potato varieties are coping with the climatic conditions in this country. Nothing stands in the way of cultivation in your own garden. By autumn at the latest, the question is: what to do with the big harvest?

The tubers are available in supermarkets all year round, but here too only the autumn price is temptingly low.

Never freeze raw

Raw frozen sweet potatoes lose both their texture and flavor. However, you don't have to do without freezing entirely. If you invest some time and cook the sweet potatoes beforehand, they will remain edible even after they have been thawed.

Boil the sweet potatoes

Blanching is not enough for these vegetables. The sweet potato must be fully cooked.

  1. Clean the tubers under running water, using a vegetable brush as well.
  2. Now cook the sweet potatoes unpeeled so that the ingredients are better preserved. If you prefer, you can of course peel the tubers beforehand.
  3. After about 20 minutes, check if the potatoes are cooked. Pierce it with a fork or knife.
  4. Drain off the cooking water and let the boiled potatoes cool down completely.
  5. Wrap each potato in aluminum foil and place in a freezer bag, then in the freezer.

Freeze slices and cubes

Since the tubers are quite large, it sometimes makes sense to freeze them, already cut into small pieces, for later use.

  • Peel tubers before cooking
  • or after they have been cooked and cooled
  • Cut into either thin or thick slices
  • rolling the dice is also an option

Thaw the sweet potatoes again

Frozen sweet potato chunks can easily be added to stews and other cooking dishes.

Whole sweet potatoes defrost well in the oven ready to eat. First, the old aluminum foil is replaced with new ones. Depending on their size, they then go into the oven for about 20 to 30 minutes at 180 degrees Celsius.

Sweet potatoes that are organically grown don't need to be peeled at all. Its shell is edible and tastes good too.

Shelf life in the freezer

Pre-cooked sweet potatoes can be stored for 12 months at minus 18 degrees Celsius. If there is enough space in the freezer, it makes sense to freeze a year's supply.
