For the preparation of some dishes, olives must be pitted. The kitchen knife is quickly pulled out. But the stone is difficult to cut out with it. With these simple methods, the olive effortlessly pulls out the pit.

The challenge of gutting
Using a knife to cut off the pulp piece by piece from the core is still a viable option. But apart from the fact that this is a lot of work, the result leaves a lot to be desired. The olives should usually be preserved as a whole or can then be cut into fine, even pieces. To do this, the pit must be removed without shredding the rest of the olive.
Three methods are available
Olives are small and smooth. It is difficult to hold on and there is a high risk of injury when working with a sharp knife. It doesn't have to be, you can get rid of the annoying core like this:
- Remove the stone from the olives using an olive pitter
- Press out the core with a knife blade
- Pit the olives with the rolling pin
Remove the stone from the olives using an olive pitter
Admittedly, an olive stoner is not part of the basic kitchen equipment in this country. Its purchase is only worthwhile if the olive is used more frequently in cooking. It works similar to the cherry stone remover.
Put an olive in the tongs, press and the stone is out. Continue with the next olive. If a large number of olives have to be freed from stones, this can sometimes take a long time.
Press out the core with a knife blade
A knife can still come in handy when pitting olives. However, its long blade is not used for cutting. And this is how you remove the core with a knife:
- Choose a knife with a long blade.
- Spread the olives out on a wooden board.
- Lay the blade flat on an olive. With a little skill and practice, you can also work on several olives at the same time.
- Apply light pressure with the blade while moving the knife toward you and back several times. The olive rolls back and forth underneath.
- The rolling motion and gentle pressure will loosen the core and push it out. If it is only partially sticking out of the olive, you can simply pull it out by hand.
tips
When using this method, be particularly careful not to apply too much pressure. Otherwise, both the olive and the pit can be crushed.
Pit the olives with the rolling pin
Somewhere in a kitchen drawer is a rolling pin that is always ready to use. Coring with this kitchen item works in a similar way to the knife variant described above. However, it is much more effective when there are many olives to pit.
The olives are distributed on a firm and level surface and rolled over several times with the rolling pin until the pits are out.
