Four important points when freezing fresh rolls
Freezing buns is incredibly easy; You can hardly make mistakes. If you observe the following four recommendations, your rolls will taste like fresh from the baker again after defrosting:
- Freshness: If you want to freeze rolls, you should use freshly baked ones that are still crispy and fluffy. An old bun will not become crisp and appetizing again even after freezing and thawing.
- Vacuum: To prevent the rolls from drying out, there should be as little air as possible in the freezer. Freezer bags are best for freezing baked goods, as the air can be squeezed out of them before sealing. If you have a vacuum sealer, you can create optimal conditions for the rolls before freezing.
- Labeling: Before filling, carefully label the freezer bags with the date of freezing. Otherwise, you can easily lose track of things in the freezer and forget or overlook older frozen foods. Frozen rolls should be used within three months. After a month, they begin to dry out and lose their flavor.
- You should not refreeze bread rolls that have been thawed again. Although there is no health risk, the quality of the rolls suffers significantly: they become dry and the crust often separates from the inside of the roll.
Like freshly baked: Defrost frozen rolls
The thawed buns will be especially tasty if you defrost in two steps:
- Take the frozen rolls out of the freezer and, while still in the freezer bag, let them thaw or at least thaw at room temperature. The rolls should be given at least an hour, but it is even better if you put them out the night before and let them thaw overnight.
- Place the defrosted rolls on a wire rack, sprinkle with a little water and put the rack in the preheated oven. At 150 °C, around eight minutes are enough to bake the rolls until they are crispy.
