Asparagus is a vegetable that is perfect for freezing. It is particularly easy with green asparagus, which does not even have to be peeled. After cooking, the frozen asparagus tastes like it was freshly harvested.

Benefits of green asparagus

Green asparagus has a number of advantages over white asparagus: Since it grows above ground and is therefore exposed to the sun, it forms more healthy nutrients. In addition, cultivation is much easier and more environmentally friendly than that of white asparagus, since, for example, there is no need to cover with plastic film - this is also reflected in the prices: Green asparagus is significantly cheaper than white asparagus. The key advantage for all cooks is that green asparagus does not have to be peeled. The woody ends are simply cut off. In addition, green asparagus is more aromatic than white.

Prepare and freeze green asparagus

Since the green asparagus does not need to be peeled, you simply wash it, pat it dry and cut off the lower ends of the asparagus spears. Asparagus is not cooked before freezing, otherwise it would become too soft after thawing.
Pack the prepared asparagus spears in portions in freezer bags labeled with the freezing date, squeeze out the air and seal the bags carefully. Alternatively, you can first spread the sticks out on a board, freeze them on it and then pack them in bags or boxes. This method has the advantage that the sticks do not freeze into a block and can be removed individually from the containers as required.

Defrost and cook green asparagus

Defrosting the frozen green asparagus is very easy:

  1. Remove the required portion of asparagus from the freezer.
  2. Put them in a saucepan with boiling salted water and a spoonful of butter. Optionally, you can add some sugar to neutralize any bitterness. Asparagus should be boiled in little water; a special asparagus pot is ideal.
  3. After five to eight minutes (depending on the thickness of the asparagus spears) the green asparagus is done. It is perfect when placed over a fork, sloping slightly downwards at both ends.
  4. If you want to use the asparagus for a cold dish, you can shock them in ice water. In this way it retains its intense green colour.
