The parasol or giant parasol is related to the button mushroom and makes a good edible mushroom in the kitchen. However, it is rarely offered in supermarkets. You have to look for parasols in the forest yourself. Depending on the weather, with a bit of luck you will also find larger quantities of the mushroom, which you can harvest without worrying, because parasols can be frozen well.

Store parasols
Storing parasols in the fridge is a matter of luck. There must be exactly the right climate in the storage area. It must not be too moist, but also not too dry. If there is too much moisture, the parasol molds overnight, if it lacks moisture it dries out quickly, becomes tough and loses its aroma. It is best not to experiment and freeze the parasols that are not consumed immediately. This requires a little preparation.
Freeze parasols
All forms of parachutist, from the drumstick stage to the shielded mushroom, are edible. If they are to be frozen, they must be raw. To save yourself work, you can prepare the mushrooms ready to cook before freezing. It is best to bread the parasol hats like a schnitzel. You can then freeze the mushrooms prepared in this way. The parasols will keep in the freezer for up to a year.
Step-by-step instructions for preparing for freezing
- Clean the mushrooms, discarding the stalks, as only the umbrella is tasty.
- Cut very large and thick hats into slices about 1 cm thick.
- Salt and pepper the mushrooms, dredge them first in flour, then in the beaten egg and coat in breadcrumbs.
- Place the mushroom slices next to each other on a tray and freeze on top.
- As soon as the parasols are frozen, you can pack them in portions in suitable freezer containers and store them in the freezer.
Prepare parasols
The frozen breaded parasols must never be thawed before preparation. Once the mushroom thaws, it becomes mushy and inedible. Therefore, put the frozen mushrooms in a pan with plenty of hot fat or straight into a deep fryer and fry them until crispy.
