Mirabelle plums are also called yellow plums because of their color and because they belong to the plum family. The fruits are tasty and also contain many vitamins - good reasons to always have them in stock at home. Conveniently, Mirabelle plums can be frozen. In this guide, you will learn what you need to consider and how to proceed.

Freeze plums - step-by-step instructions
First of all: It is very time-consuming to prepare mirabelle plums for freezing. You should plan (at least) a whole day, especially for large quantities of more than ten kilos. Of course, you also need a lot of space in the freezer and enough containers in which to store the fruit.
Here are the instructions for freezing mirabelle plums:
- Wash your mirabelle plums thoroughly and while doing so, pay attention to blemishes such as broken skin or rotten spots. You should not freeze fruit with "problem areas".
- Dry the yellow plums, which are suitable for the freezer, carefully - preferably on and with kitchen towels. Simply pat the fruit until it is completely dry.
- Now comes the most difficult or most demanding task: you have to pit the mirabelle plums. We recommend that you use a good quality plum stoner for this purpose to keep the effort within limits.
- Provide a sheet pan or alternatively another flat surface that fits in your freezer. Cleanliness is important. If necessary, clean and dry the respective utensil beforehand.
- Now spread out the washed and pitted mirabelle plums on the surface. Each fruit should be as free as possible (i.e. not touching any of the neighbors).
- Put the mat with the mirabelle plums in your freezer.
- Wait about an hour. During this time, the fruit freezes.
- Get the pad with the mirabelle plums out of the freezer.
- Then fill the partially frozen fruit in portions into containers that are suitable for your freezer - such as freezer bags or boxes. If you decide on the variant with freezer bags, you have to remove the air from them before sealing them - this is particularly easy with a vacuum sealer. Otherwise, you can also use your mouth as a tool.
- Close the containers tightly (airtight).
- Label the bags or boxes with the date. This helps you to keep an eye on the durability and keep it under control.
- Now put the containers with the plums in the freezer.

- Freezing (steps 4 through 7) prior to proper freezing will ensure the fruit doesn't clump together. They retain their original shape and are easier to remove.
- It makes sense to freeze mirabelle plums in portions - for two main reasons: Firstly, this gives the fruit more space in the respective freezer container, which improves the consistency and taste; and on the other hand, if you fancy the yellow plums, you can simply get a portion out of the freezer without “having to” eat too many at once.
- Frozen plums have a shelf life of around eight to ten months.

Take the container out of the freezer the night before and place it in the fridge overnight. If heat is not applied to the fruit, it will thaw without developing a mushy, unsightly (and inedible) texture.
