The sugar-sweet yellow plums are rightly reminiscent of plums and damsons: the species are closely related. They're great for juicing, which is quick and easy to do the right way.

What can plums be used for?
Like their violet relatives, mirabelle plums are suitable for a variety of uses in the kitchen: they taste just as good fresh from the tree as in compote, jelly, on cakes and in tarts or just as juice.
Their often small size can be an advantage as well as a disadvantage when it comes to pitting: On the one hand, you have to pit a large number of Mirabelle plums in order to obtain a respectable amount of pulp. On the other hand, the fruits are often small enough to be pitted with a cherry stoner.
How can mirabelle plums be juiced?
As with most fruits, there are several methods for juicing Mirabelle plums. However, most of them have one major disadvantage: when juicing cold, for example with a juicer, a juice extractor or a berry press, the mirabelle plums have to be pitted beforehand. When juicing hot in a saucepan, it is also an advantage if the mirabelle plums no longer have a pit.
Since the pitting of mirabelle plums is a very tedious job, because the pulp is often difficult to remove from the stone, there is only one method of juicing that is recommended for mirabelle plums: steam juicing.
Steam juicing mirabelle plums step by step
- Wash the Mirabelle plums and carefully discard any rotten or moldy fruits, as these will spoil the juice.
- Place the prepared mirabelle plums in the fruit basket of the steam extractor. If you like, you can add some sugar to sweeten the plum juice.
- Now put the steam juicer together: At the bottom is the pot filled with water, above it the juice collection container and above that the filled fruit basket. Put the lid on top.
- Place the steamer on the stove for at least an hour. The hot steam destroys the cell structure of the plums, causing the juice to escape and drip into the collection container.
- Fill the finished juice into prepared containers via the spout hose. If you use sterile bottles and close them immediately after filling, the plum juice can be kept for several months without further boiling.
Incidentally, the homemade plum juice is also suitable for making jelly or for preparing plum liqueur.
