In the kingdom of mushrooms, the curly hen - or fat hen, as it is also known in some regions - stands out because of its characteristic appearance: Basically, it resembles a large bath sponge or a cauliflower that grows at the foot of a pine tree and actually its size of a football can achieve. This mushroom is not only easy to recognize, it is also considered to be a very versatile, extremely tasty edible mushroom.

However, before you want to prepare or preserve the Krause mother hen, you still have a lot of work to do: a lot of dirt collects in the narrow ramifications of this fungus, which cannot be removed with just a brush or a damp cloth. For this reason, the Krause mother hen must always be washed so that you don't accidentally dry and eat one or the other beetle in addition to sand and pine needles.

In contrast to some other types of mushrooms, the Krause hen does not lose its taste either by drying or by freezing. Basically, it doesn't matter which type of preservation you choose: whether you want to freeze or dry the mushroom depends primarily on how you plan to use it. Dried mushrooms are more flavorful, but freezing is a quicker and more convenient method of preservation.

In the refrigerator

Cleaned and cut into small pieces, Krause hens will keep for about a day or two if you store them in the vegetable compartment of the refrigerator. Do not pack them in a plastic box or similar, but wrap them in a dry and clean kitchen towel (cotton or linen if possible). A finished dish can also be stored in the fridge for a day.

Freeze

The bite-sized and cleaned pieces of Krausen Glucke should first be blanched in boiling salted water for a few minutes before freezing. Then dry the pieces well and freeze them in a freezer at at least minus 18 °C. Ready meals can also be frozen, but they only keep for a maximum of two to three months.

Do not use the curly hen as part of a mixed mushroom dish and, if possible, only preserve it on its own: its intense aroma masks all other tastes anyway.
