Tomato juice satisfies a small hunger between meals, is ideal for making quick soups and is considered a healthy helper after a night of drinking. In addition, with this homemade vegetable juice you know exactly what is in the bottle. The juice keeps for months when boiled down, so you can always fall back on your own supply.

Ingredients:
- 1 kg aromatic tomatoes
- 1 celery root
- 1 dash of good quality olive oil
- salt and pepper to taste
preparation
- Bring a pot of water to a boil.
- Prick the tomatoes with a toothpick and place them in the boiling water.
- Allow to stand for a short time and immediately shock in ice cold.
- Now you can peel the skin off the fruit.
- Remove the stalk and cut the tomatoes into small pieces.
- Put them in a saucepan, add a little salt and simmer for a few minutes at low temperature.
- Add the olive oil and the peeled, chopped celeriac.
- Once the tomatoes have completely broken down, remove the saucepan from the heat and strain the mixture through a fine-mesh sieve.
- Catch the juice and season with salt and pepper.

Rinse bottles with screw caps and intact seals thoroughly and sterilize in boiling water for ten minutes.
Then fill in the hot juice through a funnel (€4.85). Seal immediately and turn upside down to cool. The tomato juice can be kept for several weeks if stored in a cool and dark place.
You can preserve it for even longer if you also boil down the vegetable juice:
- Pour the seasoned tomato juice into the sterilized bottles.
- Place them on the grid of the preserving machine. The vessels must not touch each other.
- Pour in enough water so that at least half of the food is in it.
- Preserve at 85 degrees for 40 minutes.
If you don't have a preserving pot, you can also preserve the juice in the oven:
- Place the sealed bottles in a dripping pan and pour in 2 centimeters of water.
- Slide into the tube and turn it on to 90 degrees.
- As soon as bubbles appear, turn off and leave the tomato juice in the heat for another 30 minutes.

Refine the homemade juice with salt, pepper and Tabasco sauce before serving. The aromatic vegetable juice is also the perfect basis for the classic cocktail Bloody Mary.
