Peaches taste best when freshly picked, but few people have peach trees in their own backyard. Therefore, if you want to stock up, it is best to resort to the seasonal offers on the market. You can then use simple means to preserve the juicy fruits at home.

How to cook peaches properly
You first need enough jars, which you should sterilize just before waking up. To do this, boil the glasses or place them in the oven at 100 degrees for ten minutes.
For the broth, prepare water, sugar, vanilla sugar or vanilla bean and some salt.
- Wash the peaches under running water.
- Then peel the fruit. First, score the skin crosswise and place the peaches in hot water. Then rinse the peaches under cold water. The shell can now be easily removed.
- Halve the peaches and remove the stone.
- If you like, you can also split the peaches into bite-sized pieces.
- Now prepare the Einmachsud from water, sugar and the other ingredients. You can experiment with the spices to suit your taste.
- Divide the peach halves or pieces among the glasses.
- Pour the hot broth over it. The fruit must be completely covered.
- Wipe the rim of the glass dry and put or screw on the lid.
The next step is to wake up the jars. The preserving machine or the oven are suitable for this.
In the preserving machine
Do not place the glasses too close together in the alarm kettle and pour water up to half of the glasses. Boil the Weckgut for 30 minutes at 75 degrees. However, observe the information provided by the boiler manufacturer. After the end of the cooking time, let the glasses cool down a bit in the cauldron.
In the oven
Here you place the glasses in the deep dripping pan and pour about 2 cm of water. Put the tray in the cold oven and heat it up to 175 degrees. Watch the glasses. If bubbles rise to the top of the brew, turn off the oven. The glasses then remain in the oven for another half hour
After half an hour, the glasses are removed from the alarm kettle or oven and left to cool completely under a cloth on the worktop.
