By pickling some of your harvested or purchased quince sweet and sour, you create tasty supplies for the time after the season. We have a very delicious recipe for you, which you can of course change a little depending on your taste as far as the list of ingredients is concerned.

Delicious recipe for pickling quinces
You need:
- fresh quinces
- 600ml of water
- 200 ml apple cider vinegar
- 550 g sugar*
- 1 package ground vanilla (5 g)
- sea-salt
- cinammon
- ginger powder
- Mason jars with lids
- kitchen scale
- medium sized jar
- small vessel
- cooking pot
- spoon
* We advise you to use birch sugar instead of normal sugar - for the sake of your health.
How to pickle your quince correctly
- If necessary, rub the down of the quinces with a clean cloth.
- Wash the fruits thoroughly and dry them carefully.
- Quarter the quinces with a sharp kitchen knife and remove the pits.
- Then cut the fruit into rough cubes.
- Use the kitchen scale to weigh 1.5 kilograms of your prepared quinces.
- Mix enough water with a pinch of salt in a medium-sized bowl.
- Put the 1.5 kilograms of quinces in the container with the salt water. Make sure the fruit is covered with the water.
- Mix 50 grams of sugar with the ground vanilla in a small bowl.
- In a large saucepan, mix 600 milliliters of water with the apple cider vinegar, sugar and sugar-vanilla mix.
- Boil the liquid.
- Take the quinces out of the salt water and let them drain briefly.
- Then put the fruit in the saucepan.
- Season to taste with cinnamon and ginger.
- Cover and let the mixture simmer over low heat for ten minutes.
- Take the pot off the stove.
- Take out the quinces, drain them and catch the liquid.
- Place the fruit in clean mason jars.
- Let the broth boil down a bit.
- Then pour it over the quinces in the jars. Make sure the fruit is completely covered.
- Close the jars tightly and turn them upside down (lid) for five minutes.
- Store the sweet and sour pickled quinces in a dark place.
