Anyone who grows snow peas in their own garden can literally watch them grow. Suddenly there are numerous flowers, and soon the green pods follow. You can't wait now. The tender pods must be harvested before larger seeds develop inside them.

Sugar snap peas with the right degree of ripeness are sold commercially. Here you just have to make sure that the goods are still crisp and fresh. Soggy sugar snap peas have already lost a lot of moisture.

If the optimal harvest time is missed for any reason, the long Scots are no longer so tasty. But you can still harvest the green peas it contains, which will increase in size over time.

The same applies to the small seeds: they are harvested when they are still green and tender. If you leave them longer, you can still use them as new seeds.

Clean and wash sugar snap peas

The snow peas need to be properly prepared for the freezer. The following work steps have to be done:

To ensure that the rich green color does not fade after freezing, the sugar snap peas, whether in pods or as individual peas, must first be blanched for a few minutes.

  1. Heat plenty of water in a saucepan.
  2. Prepare a large bowl of ice cold water.
  3. Once the water is boiling, add the sugar snap peas to the saucepan.
  4. Blanch them in it for about two minutes.
  5. Remove the snow peas from the hot water and immediately place them in the ice water.
  6. After another two minutes, the cooled peas are placed on a plate lined with paper towels. Well spread on it, it dries quickly.
  7. Place the sugar snap peas in freezer containers and then into the freezer.

Sugar snap peas last far longer than other vegetables. The sweet pods can be stored for a full 24 months at minus 18 degrees Celsius.

The blanched and deep-frozen mangetout are almost ready to eat. They only need a few minutes of heat, which is why they are added directly from the freezer to the pan.
