Beetroot can be freshly harvested in the garden from August. If you can't eat everything in time, you don't have to give away the leftover part of the harvest. The red tuber can be frozen as a winter supply.

Freezing increases storage time
Beetroot can be stored in the refrigerator for two to four weeks without any problems. After that, this type of cooling is no longer enough for her. If you cannot use them up completely within this period of time or want to stock up on purpose, you have to switch to the chest freezer.
Only freeze cooked
Simply put them in a freezer bag and put them in the chest, unfortunately this is not possible with these vegetables. It must be cooked beforehand. This takes some time, but it's still worth it. If you like the taste of this tuber and appreciate its healthy ingredients, you won't be disappointed with the defrosted version either.
Everything you need
In addition to some fresh tubers, you will also need a few kitchen utensils that will make the preparation work and freezing easier:
- a vegetable brush
- a large pot with a lid
- a kitchen knife
- Plastic cans or freezer bags
How to bring the beetroot to a boil
Right at the beginning, the tubers are gently cleaned of adhering dirt with the vegetable brush. And so it continues:
- Place the beets in a saucepan and cover halfway with cold water.
- First, bring to a boil on high. Then cook at a lower level for about 30 to 60 minutes, depending on the size of the bulbs, until al dente.
- Remove the skin from the cooled bulbs.
- Cut the beets into bite-sized pieces, either sliced or diced.
tips
You can recognize boiled beets by the fact that the skin comes off easily. You can get red fingers clean again with a little lemon juice.
shelf life and thawing
It is best to spread large quantities over several cans or freezer bags, as this makes it easier to store them in the freezer.
All containers should be labeled so that the beets are easy to find during their long shelf life of around eight months. Before using, the beets only need to thaw slightly.
