Pointed cabbage is the most tender and well-tolerated type of cabbage. You have to be careful when you freeze the vegetables. We'll explain exactly what you need to do - using simple step-by-step instructions.

Freeze pointed cabbage - this is how it works
You can freeze pointed cabbage in two ways:
- raw
- blanched
Freeze raw pointed cabbage
In principle, it is possible to freeze raw pointed cabbage. However, the vegetables lose more vitamins than in the prepared (blanched) state. In addition, raw frozen pointed cabbage tends to become mushy within a short time when thawed. We therefore recommend that you first blanch the healthy vegetables and then freeze them.
Freeze blanched pointed cabbage
- Remove the outer leaves from the cabbage and set them aside.
- Using a sharp knife, cut the pointed cabbage into four parts (first cut in half, then cut the two halves in half again).
- Remove the stalk - again with a sharp knife.
- Cut the cabbage into cubes or strips.
- Bring salted water to a boil.
- Transfer the cabbage cubes or strips to the boiling water.
- Reduce the heat so the salt water is just simmering.
- Let the cabbage cubes or strips soak in it for about two minutes.
- Drain the cabbage parts using a sieve.
- Shock the pieces evenly with ice water.
- Drain the cabbage cubes or strips well. A salad spinner speeds up the process. Otherwise, place the pieces on paper towels and gently pat until they feel completely dry.
- Put the pieces of cabbage in portions in freezer bags or sealable cans that are suitable for the freezer. With the freezer bags you have to pull the air out with your mouth or (easier) a vacuum sealer before sealing.
- Label the containers with the current date to keep track of the storage period.
- Stick the bags or cans in the freezer.
Important tips:
- Make sure the cabbage cubes or strips are really dry before freezing. They have no place in the freezer when they are wet or damp. They would only go bad - and thus unusable.
- Always fill the containers in smaller portions to give each piece of cabbage enough space.
- The pointed cabbage will keep in the freezer for about eight months.
Extra: This is how you can use the outer leaves
You can put the outer leaves to the side and puree them into a smoothie or use them for a potato dish. Alternatively, there is the option to freeze these parts as well - as follows:
- Clean the outer leaves carefully.
- Put the leaves in hot, lightly salted water.
- Turn the heat down to a lower setting (water should only be slightly bubbling).
- Blanch the outer leaves for about a minute.
- Pour and briefly rinse the leaves with cool tap water.
- Proceed with drying and portioning as with the other pointed cabbage parts.
- Place the bags or cans in the freezer.
