Store the king oyster mushrooms in the fridge
Like all mushrooms, king oyster mushrooms can only be stored for a short time due to their high protein content. The aromatic mushrooms taste best when fresh, although you should make sure that they are as fresh as possible when you buy them. You can immediately recognize the best quality king oyster mushrooms by the following characteristics:
- The mushrooms are not packed in plastic, but are offered in bulk.
- You will be chilled.
- The stem ends are not yet dry.
- Cap and stem are elastic - they spring back after pressure.
- Cap and stem are the same color.
- The mushrooms smell pleasantly fungal and not easily rotten.
If the fresh mushrooms cannot be processed immediately, they can be stored in the refrigerator for about eight to ten days. To do this, wrap them in a damp kitchen towel, cotton or linen towel and place them in the vegetable drawer of the refrigerator.
This is how you preserve king oyster mushrooms
Instead of storing the king oyster mushrooms in the fridge for so long and risking them spoiling, you can easily preserve them. Finely sliced, the mushrooms freeze very well, dry them and pickle them in vinegar and herbs.
Freeze king oyster mushrooms
To freeze king oyster mushrooms, first clean and cut the mushrooms. Slicing can be done quickly and easily by simply slicing the mushrooms. Then pack the mushroom slices in freezer bags or plastic boxes that can be closed tightly with a lid and freeze them in a freezer at at least minus 18 °C. Blanching beforehand is neither necessary nor advisable, since king oyster mushrooms draw a lot of water and then lose a lot of their taste. Do not thaw the frozen mushrooms before use, just add them to the hot pan.

White threads or a cobweb-like, white web on the king oyster mushrooms does not necessarily have to be mold. It can also be the mycelium, which you can simply cut off with a knife and use for your own mushroom culture. The mushrooms themselves are still edible.
