- Hang upside down on a beam in a dry, airy place
For the next 14 days, periodically pull the binding material as the stems shrink due to the loss of moisture. When the herb sprigs rustle when touched, the process is complete. Ideally, do not detach the leaves from the stem yet. The aroma is retained better if this is done just before use.

Within a few hours you can preserve your best lemon thyme in the oven. To do this, place the cut shoots on a baking sheet without stacking them. Spread a piece of baking paper over it and put it in the oven. At 35 to 50 degrees circulating air, the branches dry within 4 to 6 hours. The oven door remains slightly open during the process. It is advisable to turn the shoots every 1 to 2 hours.

In order to preserve large quantities of fruit, vegetables and herbs every year, it is worth investing in a dehydrator. The device is equipped with several sieve floors and a circulating air heater.
